Chicken/Stuffing/Brocoli Foil Packet Meal

by H2 on July 2, 2010

Grab and dump. No dishes. That’s the essence of this meal. You really can’t screw it up. This is again one of those meals that, after you make it once, you don’t need a recipe its so easy. I shared my fascination with Stove Top Stuffing before and that’s the surprise ingredient in this recipe. Who would think stuffing mix on the grill?

The ingredients

Spray large piece of foil with non-stick spray. Mix stuffing mix with amount of water recommended on package. Put 1/4 of the mixture on foil pan. I like to use kitchen shears and cut a half of a chicken breast into strips and place on top of stuffing.

Throw some frozen broccoli on top of that

Drizzle a little ranch dressing on

Next sprinkle some real bacon bits on

Fold lengthwise then wrap up each end leaving room for air to circulate. Put on a hot grill for 25-30 minutes.

You have an all-in-one meal with no dishes!

Note you can also sprinkle some shredded cheddar cheese on this for even more flavor!

Have you ever baked these packets in the oven? I’d love to be able to make this during the Winter months. How long would you bake these for, and at what temperature? Thanks…it looks like a very yummy meal. I just found your website today. I hope to find more great recipes here!

Yes, I have. I needed to make them very early one morning for a TV segment, so I put it in the oven. I’d recommend the oven on 375 or 400 for 25-30 minutes. The first time you try it in your oven just be sure to open one up and make sure the chicken is done.
