This past weekend I was challenged with making enough potatoes for around 100 people who attended a surprise anniversary party for my aunt and uncle. Now, I could have made pans and pans of cheesy potatoes, freaked out about having them done at the right time and used three people’s ovens to make them all. Instead, I used a roaster I bought at a garage sale and a recipe my sister-in-law’s mom provided me (Thanks Lori!). It was so much easier.
Roaster Cheesy Potatoes
6 – 2 lb. bags of frozen cubed hash browns
6 cups sour cream
6 cans of cream of chicken soup
6 sticks of butter
6 – 16 oz. bags of shredded cheese
Spray the roaster with non-stick cooking spray. Mix butter, soup, sour cream…then add potatoes and cheese. Cook in roaster @ 350 for 5 1/5 to 6 hrs. Stir often. Serves around 100.
I found that my roaster got really hot quickly and scorched the corners so I had to turn it down early on and they still cooked quickly and were done in plenty of time. I had added some pepper for a little flavor. They turned out delicious if I do say so myself. This is a great way to feed alot of people!
