On today’s Fox 28 $10 Tuesday segment, where I’m challenged to share a meal for a family of 4 for under $10, I shared Sausage Potato Casserole. This is a casserole my mom used to make and I substituted hamburger with sausage, because well, I ‘m a hog farmers daughter….Really though sausage is great to use in place of hamburger, because it has so much flavor to begin with. I’m personally excited that instead of a $10 meal, it was more like a $5 meal.
Sausage Potato Casserole
1 package of sausage
4-5 medium size potatoes
2 T olive oil
2 T butter
1 t garlic salt
1 T dried onion
2 cans green beans
1 can of cream of mushroom soup
Scrub potatoes, then thinly slice. Add to medium high pan with olive oil, butter and garlic salt. Fry until soft or potatoes begin to come apart. While those are cooking brown the sausage in another pan. In a casserole dish add potatoes, sausage, green beans and cream of mushroom soup. Put in the oven at 350F for 20 minutes.
Serves 4. Great with warm bread and a salad.
